After the seasoning process, we were ready to try this thing on some guacamole. While it's not huge, we find that the size is perfect for making dips and such for 2 or 3 people. Because of it's porous texture the molcajete makes quick work of avocados and any other vegetables that you decide to add to your dips. We didn't notice any grit in the guacamole, so the seasoning process must have worked. The final product tasted just like the chef in Mexico made.
The only gripe I have is that the legs are still very rough. We have granite counter tops, and we did leave a little scratch on them. I figured out that a towel underneath the molcajete is the best solution. Overall, we love the size and usefulness of the molcajete. We both said we wished we had tried one out a long time ago.
This low risk gamble paid off, let me tell you.
Upon receiving the package, I noticed a few chipped rock pieces from the molcajete, but nothing that affected its stability or use (small chip on one leg was the only noticeable piece impacted). I did not see any concrete/non-volcanic rock use to patch breaks or gaps in the item. So I dove right into curing it the next day. I would suggest you look up videos of curing for this (marvel at your newfound muscles and sturdier wrists after the curing process).
I seasoned using 1 anaheim pepper and 4 garlic cloves after curing, by mashing them up in the molcajete all through the bowl, and spreading some of the crushed mix on the rim as well. I sat it out overnight to ensure the oils and juices penetrated the pores. In the morning, I rinsed it out, and let it dry.
Using the molcajete after curing/seasoning was a simple matter of crushing what I wanted to make in the bowl, pulling it out using a good silicone spatula, and then rinsing it and scrubbing it with JUST WATER, NO SOAP!!!
I use it several times a week, have no grit leftover due to curing process, and it has been a fantastic addition to my kitchen. The only knock I would have against it is I can guess that shipping could be unkind to the molcajete. It's packaged well, but the sellers aren't always in control of how delivery/shipping treats the box. The stone itself is sturdy, but I can see where application of too much weight/pressure could cause damage.
I highly recommend!
We did our research after we our purchase and found it is a lot easier to sand down the bowl with sand paper. This takes a little time and is harder than it seems, your arms get weak and patience wears thin but it's worth it!
Once sanded down and not as rough, we began grinding the bowl with rice to help smooth it out some more. After that was complete it was on to seasoning, grinding a mixture of garlic cloves, salt and cumin seeds.
We had read about baking the bowl for about 30 minutes, which we haven't done yet. Also, you should never wash the bowl with soap. We simply rinse it out with water and a sponge then let it dry. Others say to clean it with a mixture of salt and water.
