How to Cook with Nonstick?

- Never use cooking spray. Aerosol cooking spray leaves a gummy residue that is difficult to remove, and that residue will cause food to stick. Instead, use an oil mister filled with olive or vegetable oil, or dab a bit of oil on a paper towel and carefully wipe the interior of the pan.

- Use the correct heat setting. Use low heat for warming, simmering and preparing sauces; use medium heat for frying, grilling, sautéing, searing or stir-frying; use high heat for boiling or reducing liquids.

- Preheat the pan. Nonstick cookware can take a minute or two longer to preheat compared to aluminum or stainless steel cookware. For best results, make sure your nonstick pan is heated to the proper temperature before adding food.

Huge versatile pan.
This is my first sauteuse pan. I wanted something large and versatile, and looks nice on the table as a serving dish.Bottom was perfectly flat. At 7 quarts, its large enough to easily hold a pound of pasta to cook in the sauce before serving. 2 pounds would fit too, and still have room for tossing.I have a Cook's illustrated macaroni and cheese recipe I cook in a 13 by 9 lasagna pan. The sauteuse pan is 20 percent larger than my lasagna pan... that's not too much larger, so I'm going to try macaroni and cheese in this non-stick pan the next time. Should make for easy cleanup.I do like using it for omelettes. I have a 12-inch nonstick skillet with the surface area of about 9 in. With this sauteuse pan, there is a little more flexibility in getting the right kind of omelette. This is my first sauteuse pan. I wanted something large and versatile, and looks nice on the table as a serving dish.

I have a Cook's illustrated macaroni and cheese recipe I cook in a 13 by 9 lasagna pan. The sauteuse pan is 20 percent larger than my lasagna pan... that's not too much larger, so I'm going to try macaroni and cheese in this non-stick pan the next time. Should make for easy cleanup.

I do like using it for omelettes. I have a 12-inch nonstick skillet with the surface area of about 9 in. With this sauteuse pan, there is a little more flexibility in getting the right kind of omelette.
